Lindsay Vale is originally from Arizona and moved to New York the summer of 2022. She landed at Eleven Madison Park for her first job in the city and fell in love with hospitality. A colleague from EMP was opening a restaurant of their own so she decided to go and continue her passions past finedining. She continues to be a full-time server for Margot Brooklyn.

During this time she wanted to challenge herself with bringing what she has learned and use it to highlight the chefs of New York and their food. In February 2024 she had her first Compliments To dinner in her home. Since then she has done art gallery dinners, birthday celebrations and personalized cooking classes with Compliments To.
